Abstract
This unit serves both to introduce the elements of Food Technology whilst simultaneously studying the engineering principles which underpin the subject. The unit is not meant to constitute a rigorous study of engineering but merely embrace those topics which are necessary for a full understanding of Food Technology. For those students with an engineering background this unit should be relatively easy, but for those of you who have little or no engineering knowledge, do not be over concerned. Each topic is self-contained and explained from basic principles. A little time and effort should provide you with a good base and enable the study of later Food Technology Units to be relatively straight forward.
