Abstract

This paper examines the transformation of the grounds of the Convent of La Merced in Jerez (Spain) into an industrial complex for the production of Sherry wine. The article examines a collection of papers found on the industrial complex. This collection range from a parchment dated in 1435 to descriptions of the complex made in the 1940s. Architectural survey and an examination of made possible the identification of surviving medieval and early modern walls within 19th century industrial and residential buildings. The history of this industrial complex serves as model for study of the widespread transformation of cities in the low Andalusia during the 19th century.
